2/3 c. precooked rice 1/2 c. water 1/2 tsp. salt 1/4 c. pineapple syrup 12 marshmallow or 1 c. miniature 6 diced maraschino cherries 8 oz. can crushed pineapple, drained 1 tbsp. sugar 1 c. cream, whipped In a saucepan, combine rice, water, syrup and salt; mix until rice is moistened. Bring quickly to a boil, uncovered, stirring gently with a fork once or twice. Cover and simmer for 3 minutes. Remove from heat and let stand 10 minutes. Add marshmallows and fruit. Cool. Add sugar to cream and fold into rice. Refrigerate until chilled. Nuts may be added. |
