ARTICHOKE NIBBLES | |
2 (6 oz.) jars marinated artichoke hearts 1/2 c. chopped onion 1 clove garlic, chopped fine 4 eggs 1/4 c. bread crumbs 1/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. oregano 1/8 tsp. tabasco sauce 1/2 lb. (2 c.) sharp cheddar cheese, shredded 2 tbsp. minced fresh or 1 tbsp. dried parsley Drain marinade from 1 jar of artichokes into fry pan, drain the other jar and discard the marinade. Chop all artichokes, set aside. Add onion and garlic to fry pan, saute until onion is limp. In bowl, beat eggs well; add bread crumbs, salt, pepper, oregano and tabasco, then stir in cheese, parsley and artichokes. Turn into a greased 7x11 inch pan. Bake in preheated 325 degree oven for approximately 30 minutes. Serve warm. |
