TEX-MEX ENCHILADAS 
12 yellow or white corn tortillas
1 (15 oz.) can chili, no beans
1 (16 oz.) pkg. cheddar cheese
Cooking oil
Grated onion

Cook tortillas on hot griddle with very little oil to coat tortillas. Turn tortilla rapidly to heat through. As tortillas are cooked, put on plate with another plate over the top to keep them warm. Shred cheddar cheese. Heat chili.

Place chili on tortilla. Put shredded cheese on tortilla. Roll tortilla into enchilada. Place in greased 9"x13" baking dish. After all the enchiladas have been made, spoon the remaining chili over the enchiladas. Sprinkle remaining cheese. Add onions, if desired. Place in microwave for 10 to 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
