SQUASH CASSEROLE 
5 to 6 c. steamed squash, sliced (zucchini)
1 onion, chopped
1 box Stove Top Stuffing
1/2 c. butter
1 c. carrots, grated
1 c. sour cream
1 can cream of chicken or mushroom soup

Steam squash and onion together, drain well. In a bowl put stuffing crumbs and seasoning package mix with melted butter. Combine drained squash, onions, carrots, sour cream, soup, salt and pepper. Mix well. Place mixture in lightly greased 2 quart casserole. Bake at 350 degrees for 30 to 40 minutes. Yields 8 servings.
