MAMAPAT'S NON-DAIRY PANCAKES 
For Egg-Free & Milk Free (Non-Dairy) Pancakes:

3 tsp. ENER-G egg replacer (or equivalent)
4 tbsp. water
2/3 cup soy milk (not too runny, not too thick)
1 cup self-rising flour
Smart-Balance non-dairy butter (as needed)
1 tbsp. extra virgin olive oil (EVOO; as needed for each cooking)
clear carbonated beverage (optional)
a handful of fresh blueberries (optional)

Combine water and egg replacer. Add flour and other liquid. Mix in blender, don't stir, ingredients. Optional fruits are added when cooking.

Preheat griddle. Drop a few drops of EVOO onto pan for each cooking.

When pan sizzles with a drop of pancake mix, spoon mix freestyle to make "animal shapes" or letters. Turn when bubbles appear on surface of pancakes. Cooking is fast. Remove to plate, repeat cooking until finished, while keeping pancakes buttered with Smart Balance, non-dairy butter.

Serve with soy milk and honey or syrup. YUM!

MAMAPAT'S TIPS:

• Tiny bubbles of carbonated drink replace some or all of the liquid in your recipe with a carbonated beverage to make your pancakes very light and tender

• As with all cooking, humidity and temperature in the air make requirements of amounts of liquid to be approximate. Be ready to adjust for appearance. Pancakes are preferred to be thick or thin.

• With careful supervision, let little hands drop a few blueberries onto their pancake while cooking.

• Completed result amounts vary according to sizes and shapes of pancakes.
