SUGAR AND SPICE PECANS 
1 c. sugar
1 tbsp. ground cinnamon
2 tsp. ground nutmeg
1/2 tsp. salt
2 egg whites
3 tbsp. water
5 c. pecan halves

Combine sugar, cinnamon, nutmeg and salt. Set aside. Beat egg whites (at room temperature) and water until foamy. Gradually add the sugar mixture, one tablespoon at a time, beating until stiff peaks form. Fold in pecan halves. Pour pecans on well-greased 15 x 10 x 1 jelly roll pan.

Bake at 300°F for 30 minutes, stirring every 10 minutes. Cool and store in airtight container.
