GREEN CHILI AND CHEESE PIE 
1 c. shredded Jack cheese
1 c. shredded cheddar cheese
1 (4 oz.) can diced chilies
1 c. half and half
3 eggs, slightly beaten
1/8 tsp. ground cumin
Prepared 9" pie crust, partially baked

Sprinkle all the Jack and 1/2 cheddar cheese over the bottom of the pie crust. Distribute the chilies over the cheese. Beat half and half with the eggs, salt and cumin. Pour into pie crust. Sprinkle remaining cheddar cheese over pie filling. Bake at 325 degrees for 40 minutes. Let stand about 15 minutes before cutting.
