GERMAN POTATO SALAD 
6 slices bacon, diced
2 tbsp. all purpose flour
1/3 c. granulated sugar
2 tsp. salt
1/8 tsp. pepper
1 egg, beaten slightly
1 c water
1/4 c. lemon juice
1/4 c. distilled white vinegar
4 c. (2 lb.) pared, sliced, cooked warm potatoes
1/2 c sliced onion
1 tsp. celery seed
1/4 c. finely chopped parsley

Brown bacon; remove from pan; drain. To drippings add flour, sugar, salt and pepper. Cook until bubbly, stirring constantly. Combine egg, water, lemon juice and vinegar. Gradually stir into flour mixture. Cook, stirring constantly, until thickened. Simmer 10 minutes. Add bacon, potatoes, onion, celery seed and 2 tablespoons parsley; toss lightly. Garnish with remaining 2 tablespoons parsley. Serve warm.
