SPINACH LASAGNE | |
1 lb. low-fat cottage cheese 1 1/2 c. part skim Mozzarella cheese 1 egg or 2 egg whites 1 (10 oz.) pkg. frozen, chopped spinach, thaw and squeeze out excess water 3/4 tsp. oregano 1/8 tsp. pepper 2 (15 1/2 oz.) jars spaghetti sauce 12 lasagne noodles, do not cook ahead 1 c. water In large bowl, mix cottage cheese, 1 cup Mozzarella, egg (or egg whites), spinach, oregano, and pepper. In lightly oiled 13 x 9 x 2 inch baking dish, layer 1/2 cup of sauce, 1/3 of uncooked noodles, and 1/2 cheese mixture; repeat. Top with remaining noodles, then remaining sauce. Sprinkle with remaining 1/2 cup Mozzarella cheese. Pour water around edges. Cover tightly with foil. Bake in 350 degree oven 1 hour and 15 minutes or until bubbly. Let stand 15 minutes before serving. Yield: 12 servings, 300 calories each. |
