CHEESE PUFFS 
3 eggs, separated
1 1/2 c. cheese shredded (Mozzarella)
1 tbsp. flour
Dash of red pepper
1/4 c. bread crumbs
1 tbsp. water
Bread crumbs

Separate eggs. Whip egg whites with an electric beater until stiff. Mix cheese, flour, pepper, and bread crumbs. Fold in egg whites into cheese mixture. Roll into balls. In a separate bowl, beat egg yolks and water. Dip cheese balls into egg yolk and then bread crumbs. Place on waxed paper on a cookie sheet and refrigerate for 2 hours. Heat 2 inches of oil in a heavy saucepan to 375 degrees. Deep fat fry until golden brown.
