SHRIMP CREOLE 
2 slices bacon, sauteed
1 tsp. butter
2 cloves garlic, minced
1/2 c. chopped onion
1 green pepper, chopped
1/4 c. celery, chopped
1 (28 oz.) can crushed tomatoes
1 (12 oz.) pkg. frozen shrimp, thawed
2-3 sprigs fresh oregano (leaves chopped)
10-12 basil leaves, chopped
3/4 tsp. dried thyme or 1 tbsp. chopped fresh thyme
1 tsp. sugar
1 tsp. creole seasoning
Cayenne pepper to taste

Saute bacon and reserve drippings. Use 2 tablespoons bacon drippings and butter to saute vegetables. Add crushed tomatoes, herbs, sugar and seasonings. Simmer 25 minutes, covered. Add shrimp and simmer 5 minutes. Serve over rice.
