BAKED APPLE PUDDING 
Apples, pared or unpared
1/3 c. butter
1 c. sugar
1 egg
1 c. unsifted flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
1 tsp. vanilla extract
2 c. grated apples
1/2 c. chopped walnuts

Combine butter, sugar and egg in bowl; beat until light. Gradually blend in combined flour, baking soda, salt and cinnamon. Stir in vanilla, apples and walnuts. Turn mixture into an ungreased 8 inch square baking pan. Bake at 350 degrees 35 minutes or until done. Serve warm or cold topped with whipped cream or ice cream. Makes 8 to 10 servings.
