ZUCCHINI BREAD | |
2 cups granulated sugar 1 cup vegetable oil 3 large eggs 1 tsp. vanilla extract 3 cups all-purpose flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 2 cups shredded unpeeled zucchini, cored 1 cups chopped nuts Preheat oven to 350°F. Prepare either loaf or muffin pan. Mix all ingredients together in a large bowl on slow speed, pour mixture into bread pan or muffin pan and place in oven. For loaf pan, bake at 350°F for 1 hour 20 minutes. For muffin pan, bake at 350°F for 20 to 25 minutes depending on size of muffins. Let cool and remove from pan. Submitted by: Alexandria |
