ZUCCHINI WALNUT BREAD 
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated zucchini, peeled
1 c. raisins
1 c. walnuts, chopped
1 tsp. vanilla

Combine ingredients; pour into two prepared loaf pans. Bake in lowest rack in oven for 55 minutes at 350°F. Let stand for 10 minutes, then cover with glaze made with confectioners' sugar and water. This recipe freezes well.

Makes 2 loaves.
