PECAN ROLL 
3 eggs
1 1/2 c. sugar
1 tbsp. cornstarch
1 c. pecans
2 tsp. baking powder

FILLING:

1 c. whipped cream
1 to 2 bananas in small pieces
1 sm. can of mandarin oranges

Turn on oven to 350 degrees. Line a cookie sheet with a sheet of parchment paper. Be sure to grease it well. Grind the pecans in a food processor. Beat the eggs and sugar until fluffy and thick (approximately 6 minutes). Add the flour, nuts and baking powder. Spread out the mixture in an even layer on the cookie sheet. Bake in oven 5 to 8 minutes. Pour sugar on a clean kitchen towel. Flip the cake on to the towel and pull off the parchment paper. If it sticks, brush some cold water on the paper and it will loosen easier. Let the cake cool. Whip the cream, add small pieces of banana and mandarin oranges. Spread cream mixture over cake. Roll up cake from the short end. (If it's hard to roll use the towel as a "roller"). Decorate with any leftover cream, nuts or oranges. Best if served as soon as possible.
