CHICKEN PARMESAN 
3 whole chicken breasts, skinned and deboned
2 beaten eggs
1 tsp. salt
1/4 tsp. pepper
3/4 c. salad oil
2 c. tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
1/2 c. Parmesan cheese
8 oz. Mozzarella cheese
1 tbsp. parsley
1 tsp. onion
1 tsp. oregano
2 c. bread crumbs

Pound chicken lightly until 1/4-inch thick. Combine eggs, salt and pepper. Dip chicken in egg mixture then in bread crumbs. Heat oil in frying pan, and brown chicken lightly on both sides. Place in shallow baking dish.

Cook tomato sauce, basil, garlic, parsley, onion and oregano on simmer for 10 minutes. Stir in butter. Pour mixture over chicken, and sprinkle with Parmesan. Cover with foil, and bake for 30 minutes at 350 degrees.

Uncover, place Mozzarella over chicken and bake 10 minutes more. Serves 6.
