ITALIAN STYLE BAKED CHICKEN | |
4 lb. broiler/fryer chicken parts 4 med. potatoes, pared and quartered 1 med. onion, sliced 1/2 c. bread crumbs 1 tbsp. minced parsley 1 tbsp. minced fresh oregano or 1 tsp. dried 4 tbsp. Parmesan or Romano cheese 2 cloves garlic, crushed 1/4 to 1/2 c. water 1/4 to 1/2 c. salad oil Salt and pepper to taste Paprika In roasting pan, place single layers of chicken and potatoes. Arrange sliced onions over top. Sprinkle with bread crumbs, parsley, oregano, grated cheese and garlic. Pour water and oil over entire dish. Salt and pepper to taste, sprinkle with paprika. Bake at 350 degrees uncovered for 1 hour and 15 minutes or until tender, covering pan the last half hour of cooking time. |
