EGGPLANT SANDWICHES 
1/2 lb. lean ground beef
2 lg. scallions finely chopped
1 tbsp. soy sauce
1 tsp. curry powder or cumin
1/4 tsp. salt
1/8 tsp. black pepper
1 tbsp. cornstarch
1 egg
1 c. bread crumbs, lightly seasoned
Eggplant, thinly sliced

Add first seven ingredients in order listed above. Put thin layer of ground beef between 2 slices of eggplant. Dip eggplant sandwich in egg and bread crumbs. Semi-deep fry at about 375 degrees until crispy brown on the outside. Drain on paper towels and serve.
