JALAPENO CORNBREAD 
3 c. cornmeal mix
2 1/2 c. buttermilk
1/2 c. oil
3 eggs, beaten
3 tbsp. sugar
1 onion, grated
1 sm. can Niblet corn, drained
3 jalapeno peppers
1 1/2 c. grated cheese

Mix ingredients in the order given. Bake in greased and floured pans at 425 degrees for about 25 minutes or until done.
