CREAM OF CHICKEN SOUP 
2 tbsp. butter
3 tbsp. all-purpose flour
dash of pepper
3 cups chicken stock
1 cup light cream or milk
1 1/2 cups chopped cooked chicken

In a large saucepan, melt butter. Stir in flour and dash of pepper. Add chicken stock and cream or milk. Cook, stirring, until bubbly; cook and stir for 1 minute more. Stir in chicken; heat through. If desired, garnish with parsley.

Makes 3 main dish servings.
