PIZZA IN A TUNNEL 
Corn meal
3 c. Bisquick
2 eggs
2 tbsp. melted butter
1 1/2 c. vegetable mix:
1/4 c. onion, chopped
1/4 c. bell pepper, chopped
3/4 c. mushrooms, sliced thin
1/4 c. olives, sliced thin
1 (3 1/2 oz.) pkg. sliced pepperoni cut in halves
14 oz. jar pizza sauce
2 c. shredded mozzarella

Grease fluted tube pan and lightly dust with corn meal. Mix Bisquick, milk, eggs and butter. Beat with electric mixer on low to blend then on high for 1 minute. Spread 2/3 of dough in bottom of pan with a spoon back. Add vegetables, pepperoni, sauce and 1 1/2 cups cheese. Spread remaining dough on top.

Bake at 400 degrees for 30 minutes. Let cool 10 minutes. Turn out onto ovenproof serving plate. Top with remaining cheese. Return to oven to melt cheese.
