SWEET POTATO BISCUITS 
2 c. sweet potatoes, boiled, peeled, and mashed
1/2 c. Crisco shortening
1 tsp. salt
1 1/2 c. self-rising flour
1/4 c. sugar
2 tsp. baking powder

Mix potatoes, shortening, and salt together and cool. Add flour and sugar. Mix well and roll out on heavily floured board. More flour must be added to make dough rollable. Roll to about 1/2 - 1 inch thickness. Cut and place on cookie sheet. Bake at 450 degrees for approximately 15 minutes.
