PUMPKIN COOKIES 
1 c. brown sugar
1 c. white sugar
1 c. butter
1 egg
2 c. pumpkin (or Hubbard Squash)
1 c. chopped walnuts
1 c. currants
1 1/2 tsp. pumpkin spice
2 tsp. vanilla
2 tsp. baking soda
2 tsp. baking powder
Salt
4 c. flour

Mix well and drop on greased cookie sheet. Bake 8-10 minutes in 375 degree oven.
