CHICKEN REUBEN 
4 whole chicken breasts (chicken thighs may also be used)
1/4 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can sauerkraut, drained (press out all liquid)
4 slices natural Swiss cheese
1 1/4 c. bottled Thousand Island salad dressing
1 tbsp. parsley, chopped

In greased baking dish, place chicken, skin side up. Sprinkle with salt and pepper. Pour sauerkraut over chicken. Top with cheese. Pour dressing over all. Cover with foil and bake at 350 degrees for 1 1/4 hours or until done. Uncover last 10 minutes.
