UTAH'S BEST POTATO SALAD 
6-7 potatoes
1 med. red onion, chopped
1/2 c. bell pepper, red or green
1/2 c. chopped sweet pickle
1/4 c. chopped radishes
3 stalks celery
3 eggs, chopped
5-6 strips crisp cooked bacon
2 tbsp. chopped chives

Boil potatoes, peel while warm; cut into cubes. Combine all ingredients. Mix together: 2/3 c. sour cream 1 tbsp. mustard 1 tbsp. parsley 1/4 tsp. pepper 1/2 tsp. salt 1/2 tsp. celery seed

Pour over potatoes. Blend well. Best set overnight.
