IRISH APPLE PIE | |
DOUGH: 4 c. flour 1 tsp. salt 1 1/2 c. shortening 2 eggs, beaten 3 tbsp. lemon juice 5-6 tbsp. water Mix flour and salt; cut in shortening. Add egg, water and lemon juice. Roll dough and place 1/2 dough in medium baking pan. FILLING: 25 apples, peeled and thinly sliced 1 1/2 c. sugar 3 tbsp. lemon juice Combine apples, sugar and lemon juice. Let stand for 30 minutes. Drain off extra juice. Arrange apples on crust. Cover filling with remaining dough. Make fork holes on top crust. Bake at 450 degrees for 15 minutes; reduce heat to 350 degrees and bake for 30 minutes. FROSTING: 1 1/2 c. confectioners sugar 1 tbsp. butter Pinch of salt 1 tsp. vanilla 1 tsp. grated cheese Mix together and frost pie while hot. |
