IRISH APPLE PIE 
DOUGH:

4 c. flour
1 tsp. salt
1 1/2 c. shortening
2 eggs, beaten
3 tbsp. lemon juice
5-6 tbsp. water

Mix flour and salt; cut in shortening. Add egg, water and lemon juice. Roll dough and place 1/2 dough in medium baking pan.

FILLING:

25 apples, peeled and thinly sliced
1 1/2 c. sugar
3 tbsp. lemon juice

Combine apples, sugar and lemon juice. Let stand for 30 minutes. Drain off extra juice. Arrange apples on crust.

Cover filling with remaining dough. Make fork holes on top crust. Bake at 450 degrees for 15 minutes; reduce heat to 350 degrees and bake for 30 minutes.

FROSTING:

1 1/2 c. confectioners sugar
1 tbsp. butter
Pinch of salt
1 tsp. vanilla
1 tsp. grated cheese

Mix together and frost pie while hot.

Excellent recipe! I usually just use the never fail pie crust but this crust, with the frosting, tastes exactly like pocket pies. I've been substituting the vanilla with either Southern Comfort, Disaronno or Jameson for a little kick. Been a big hit since I found this recipe.
