ZUCCHINI BREAD 
3 eggs, beat until frothy
2 c. sugar
1 c. oil
3 c. grated zucchini (unpeeled)
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tbsp. baking powder
3 tbsp. cinnamon
1 c. nuts (opt.)

Mix in order given. Put into 2 greased loaf pans and bake for 1 hour at 325 degrees.
