MISSISSIPPI QUEEN BREAD PUDDING 
1/4 c. raisins
2 tbsp. amaretto, whiskey or hot water
5 oz. day-old bread, preferably French
1/4 c. pineapple juice
1/4 c. apple juice
1/4 c. orange juice
2/3 c. fruit cocktail
3 eggs
1/3 c. sugar
1/2 c. whipping cream
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg

In small bowl, soak raisins in amaretto several hours or until plump. In large bowl, tear bread into 1/2-inch cubes. Combine and add fruit juices and let soak until all liquid is absorbed. Add raisins and fruit cocktail. Turn into greased shallow 1-quart casserole. In separate bowl, beat eggs with sugar, add whipping cream, cinnamon and nutmeg. Pour over bread mixture. Bake at 375 degrees for 40 minutes or until knife inserted in center comes out clean. Serve warm or chill. Makes 6 servings.
