BEST-EVER MUFFINS 
3/4 c. sifted all-purpose flour
2 1/2 tsp. baking powder
1 well beaten egg
1/3 c. salad oil or melted shortening
1/4 c. sugar
3/4 tsp. salt
3/4 c. milk

Sift dry ingredients into bowl; make well in center. Combine egg, milk and oil. Add all at once to dry ingredients; stir quickly just until dry ingredients are moistened. Fill greased muffin pans 2/3 full. Bake at 400 degrees about 25 minutes.

Blueberry muffins: Prepare batter above. Gently stir in 1 cup fresh or thawed and well-drained frozen blueberries.
