CHICKEN PARMESAN 
12 Ritz crackers, crushed fine
1/2 c. Parmesan cheese
1 egg
4 oz. Mozzarella cheese, shredded
1 tsp. poultry seasoning
4-6 half chicken breasts, skinned and boned
1 jar spaghetti sauce

Mix crackers, Parmesan cheese, and poultry seasoning in a shallow dish. Whip eggs in another shallow dish. Dip chicken breasts in the egg and then in the cracker mixture, coating both sides well.

Heat some oil in a skillet and brown both sides of the chicken. Place chicken in a baking dish, pour sauce over top, and bake at 350 degrees for 30 minutes. Sprinkle Mozzarella on top and bake until melted.
