KING RANCH CHICKEN 
1 frying chicken (about 2 1/2 lbs.) or other chicken meat (we use boneless breast)
1 (7 oz.) pkg. Doritos
3/4 c. chopped onions
1/2 c. chopped green pepper
1 tsp. chili powder
1 c. milk
1 can cream of mushroom soup
1 can cream of chicken soup
1 (10 oz.) can Rotel tomatoes & green chili, minced
1/2 lb. fresh mushrooms, diced (opt.)
1/2 lb. sharp cheddar cheese, grated

Cook chicken until tender in 5 or 6 cups water (may take a couple of hours). Drain, remove bones and skin, and shred meat. Crush Doritos and spread in bottom of 9"x13" pan. Add chicken. Blend rest of ingredients except cheese. Pour over chicken. Top with cheese. Bake at 350 degrees for 40 minutes. You can prepare everything except the blended liquids a day ahead of time and store in refrigerator.
