IRISH POTATOES 
8 oz. cream cheese (softened)
1/4 c. butter (softened)
4 oz. coconut
2 tbsp. vanilla
2 lbs. confectionery sugar
Cinnamon

In large pot add 1 pound sugar, cream cheese, butter, coconut and vanilla; mix. Gradually add other pound of sugar. Roll into small balls. Refrigerate 1 hour.

Put cinnamon in plastic bag. Add about 6-10 balls at a time. Coat with cinnamon. Tap before removing. Refrigerate.
