LIGHTNING CAKE (HOT MILK CAKE) 
2 eggs
1 tsp. vanilla
1 c. sugar
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. hot milk
1 tbsp. butter

Beat until thick, eggs and vanilla. Beat in a little at a time, sugar. Sift together and stir in flour, baking powder and salt. Heat butter and milk until butter melts. Stir into the first mixture and beat 1 minute or until smooth. Pour into a buttered 8"x8"x2" pan.

Bake at 375°F about 25 minutes. Double the recipe for a Bundt cake. Pour on a glaze of powdered sugar and milk.

I love this recipe because it is the small pan version of Hot Milk cake. I have used it for years to top a cake I make by taking fresh fruit and sugar or pie filling and putting it in an 8x8 pan bottom and heating in 375°F oven till fruit bubbles. Then I pour the cake batter over the top and return to the oven, wonderful.
