MEAT POTATO ROLL 
1/2 c. beef bouillon
1 onion, chopped
1/8 tsp. garlic powder
1 lb. ground beef
1 egg, beaten
2 slices of bread, crusts removed
1 tsp. salt
1/2 tsp. oregano
Dash of pepper
3 tbsp. bread crumbs
2 c. instant mashed potatoes, seasoned with 1 tbsp. parsley

In small saucepan, heat onion in 1/2 cup beef bouillon. Cook until tender. Remove onions and put them into a mixing bowl along with the meat. Add egg, salt, oregano, pepper, garlic powder and bread that has been soaked with water and then squeezed out. Mix well. Sprinkle bread crumbs on waxed paper. Place meat mixture on paper and spread into rectangle about 9 x 14 inches. Spread potatoes on top of meat and roll like a jelly roll. Put into 9 x 5 inch loaf pan. Pour the 1/2 cup bouillon over the meat. Bake at 350 degrees for 1 hour. Serve with mushroom gravy.
