RICK'S FAVORITE CHICKEN
CASSEROLE
 
8 oz. noodles
1/2 c. butter
1 c. sliced mushrooms
1/3 c. flour
2 c. chicken broth
1 c. milk
1/4 c. pimiento, cut into strips
2 tsp. salt
1/2 tsp. pepper
2 c. cooked, cut up chicken or turkey
1/3 c. grated Parmesan cheese

Cook noodles and drain. In large skillet, melt butter and cook mushrooms until tender. Blend in flour; gradually add broth, milk, pimiento, salt and pepper, stirring constantly until sauce in thickened. In greased 2 1/2 quart casserole, combine noodles, chicken and sauce; top with cheese. Bake 20 minutes at 350 degrees.
