BEEF AND VEGETABLE LOAF 
2 lb. finely ground beef
1/2 lb. ground salt pork
1/2 c. soft bread crumbs
1 lg. onion, finely grated
1 lg. carrot, finely grated
1 green pepper, finely grated
2 cloves garlic, finely chopped
1/2 c. chopped green onions
1/2 c. chopped parsley
3 eggs, beaten
1 tsp. salt
1 tsp. dry mustard
2 tbsp. Worcestershire sauce
1/4-1/2 lb. bacon strips
Onion rings
Thinly sliced carrot

Combine ground beef, salt pork, bread crumbs, onion, carrot, green pepper, garlic, green onions, parsley, eggs, salt, mustard and chili sauce. Blend well together and form into a loaf. Place on top of bacon strips in a casserole. Top with onion rings, sliced carrot and more bacon strips.

Cover and bake for 1 hour in a preheated 350°F oven. Uncover and continue baking for 35-45 minutes, basting frequently.

Serves 4-6.

This is amazingly good with marble-size potatoes browned in butter until crisp. Serve with them a romaine salad dressed with lemon juice and olive oil. Have a good pumpkin pie for dessert.
