CHICKEN WITH BOURBON 
2 frying chickens, cut into pieces
2 tbsp. chopped scallions
2 tbsp. olive oil
1/4 c. butter
1/3 c. bourbon
1 c. heavy cream
1 lb. fresh mushrooms, sliced

Cut up and wash chickens. Dust chicken parts in flour seasoned with salt.

In skillet, saute chicken in oil and butter, adding scallions while cooking. Baste with bourbon. Cook until chicken is golden brown.

Remove chicken and place in casserole dish. Place mushrooms in fry pan and saute. Add heavy cream and cook until warmed through. Pour over chicken. Bake in 350 degree oven for 30 minutes.
