BLACK BOTTOM CUPCAKES 
8 oz. cream cheese
1 egg
1/3 c. sugar
1/8 tsp. salt
16 oz. pkg. chocolate chips

CHOCOLATE BATTER:

1 1/2 c. flour (2 1/4 c.)
1 c. sugar (1 1/2 c.)
1 tsp. baking soda (1 1/2 tsp.)
1/4 c. cocoa (1 1/2 c. + 2 tbsp.)
1/2 tsp. salt (3/4 tsp.)
1 c. water (1 1/2 c.)
1/3 c. oil (1/2 c.)
1 tbsp. vinegar (1 tbsp. + 1 1/2 tsp.)
1 tsp. vanilla (1 1/2 tsp.)

Place cream cheese, egg, sugar and salt in a bowl. Beat well and stir in chocolate chips. Set aside.

Beat all remaining ingredients until blended. Fill cupcake liners 1/2 full. Top each with a heaping teaspoon of cream cheese mixture. Bake at 350 for 25-30 minutes.

Note: There is too much cream cheese mixture so I make 1 1/2 (in parenthesis) of the chocolate batter.

18-24 cupcakes. These are wonderful!!!
