PEANUT BUTTER COOKIES 
2/3 c. firmly packed light brown sugar
1/2 c. chunky or smooth peanut butter
1/3 c. butter, softened
1/4 c. egg substitute
1/2 c. cream of wheat cereal, uncooked (regular, instant or quick)
1 tsp. vanilla
1 1/4 c. all-purpose flour
1/2 tsp. baking soda

In medium bowl beat brown sugar, peanut butter, butter and egg substitute until fluffy. Blend in cereal and vanilla. Stir in flour and baking soda to make a stiff dough.

Drop by spoonfuls on greased (sprayed with Pam) baking sheet about 2 inches apart. Flatten balls with bottom of floured glass or fork. Bake at 350 degrees for 8-9 minutes. Cool on wire racks.
