CHICKEN SCARPERILLO 
5 lbs. chicken, cut up in small pieces
4 tbsp. butter
2 tbsp. oil
2 tsp. salt
1/2 tsp. pepper
Garlic to taste
2 tbsp. green onion
3/4 c. mushrooms
3/4 c. tomato sauce
2 tbsp. chopped parsley
1 1/2 c. chicken broth
1/2 c. sauterne or white wine

Heat oil and butter, saute chicken. Sprinkle with salt, pepper, garlic and onions. Add tomato sauce, chicken broth and wine. Cook 30 minutes, then add parsley and mushrooms. Cook until tender.
