CREAM OF MUSHROOM SOUP 
1 c. sliced fresh mushrooms
2 tbsp. chopped onion
2 tbsp. butter
2 tbsp. flour
2 c. chicken broth
1 c. whipped cream (milk)
1/4 tsp. salt
1/8 tsp. pepper

Cook mushrooms and onions in butter until tender, not brown (5 minutes). Blend in flour, add chicken broth. Cook, stirring constantly, until slightly thick and bubbly. Stir in cream, salt and pepper. Heat through. Serves 4 to 6.
