15 MINUTE TUNA CASSEROLE 
1 can cream of mushroom soup
8 oz. can water chestnuts, sliced, drained
1 tbsp. instant minced onion
1 c. celery, chopped
1/4 c. water
6 1/2 oz. can tuna, drained
2 c. China Boy rice noodles
1/2 c. cashews, slivered almonds or peanuts

Combine 1 cup noodles with all except nuts. Put into ungreased baking dish. Cover with the other cup of noodles and sprinkle with the nuts. Bake at 375 degrees for 15 minutes. Serves 4. Double recipe for 9"x13" pan. Optional: Garnish with mandarin orange slices, pineapple chunks, or slices of fresh peaches.

My son loves tuna fish but a lot of tuna casseroles are pretty fattening. In this one, the noodles provided enough fat and I used fat free mushroom soup, so it was pretty nutritious. I ended up enjoying the dish too!
