PEACH MUFFINS 
1 3/4 c. flour
1/4 c. sugar
3 tsp. baking powder
2 eggs
1/4 c. corn oil
3/4 c. milk
1 1/4 c. peach pie filling

Sift together flour, sugar and baking powder. In another bowl, beat eggs until frothy. Stir in oil and milk. Add flour mixture and mix with wooden spoon only until moistened. If spices of peach are large, break up before stirring pie filling into batter. Do not over mix.

Pour or spoon batter into 12 greased muffin buns, fill 2/3 full. Bake at 400 degrees for 25-30 minutes.

These muffins are wonderful with a few changes. Another 1/4 cup of flour, 1 tablespoon vanilla extract, 1/2 teaspoon almond extract. I mashed the peach pie filling a little so it would distribute better. I also used a streusel topping. Should change the name to Peach Pie Muffins. Nice delicate texture. Fantastic!!!

I used the recipe above, added fresh peaches instead of pie filling. Added 2 tsp. pumpkin pie spice, used container of yogurt and finished filling 3/4 cup with milk instead of all milk. Made cream cheese mixture of Splenda, 1 egg and 8 oz. cream cheese. Followed recipe as directed with these alterations and placed cream cheese in pastry bag and put tip down in muffin ===peaches and cream muffins. Enjoy!
