PORK CHOPS LUXEMBOURG 
1/2 lb. bacon
1 (15 oz.) jar applesauce
1 tbsp. brown sugar
1/2 tsp. mustard
4 oz. dry white wine
1/2 tsp. black pepper
Pinch thyme
Pinch oregano
6 loin pork chops 1" thick
1/4 tsp. paprika
1 oz. cognac
2 lb. sauerkraut

Cut bacon into small pieces and fry until crisp. Mix with applesauce, sauerkraut, sugar, mustard, wine, pepper, thyme and oregano. Place in shallow 12 x 24 inch casserole dish.

Saute chops until light brown on both sides. Place on top of mixture in casserole and sprinkle with paprika. Cover and bake at 300 degrees for 90 minutes. Add cognac and simmer another 5 minutes.
