LASAGNA 
1/4 c. vegetable oil
1 c. chopped onions
2 tbsp. garlic
12 oz. tomato sauce
18 oz. tomato puree
1 tbsp. salt
1/2 tsp. black pepper
1/8 tsp. parsley flakes
1 lb. lasagna noodles
1 tbsp. oregano
1 bunch fresh spinach, cooked and chopped (or 6 oz. frozen spinach, thawed and chopped
8 oz. cottage cheese
2 lbs. Mozzarella cheese
1/2 c. Parmesan
4 oz. ripe olives

Brown onions in vegetable oil and add garlic, spices, and tomatoes and cook 2 hours. Layer into greased pans - sauce, noodles, cottage cheese, spinach, Mozzarella cheese, black olives. Repeat 2 or 3 times and end with sauce. Top with Parmesan cheese. Cover with foil. Bake 45 minutes at 400 degrees.
