REALLY GOOD BEEF STEW 
2 lbs. beef cubes, lean
1 (15 oz.) can tomato sauce
1 (13 3/4 oz.) can beef broth
1 lg. onion, cut in chunks
1 pepper (green, yellow, red or mixed)
3/4 lb. green beans, fresh, cut up
1 lb. carrots, fresh, cut up
4 cloves garlic (more or less, to taste), chopped
1/2 lb. mushrooms, fresh
1 tbsp. Worcestershire sauce
1 tsp. thyme
1 tsp. basil
1 bay leaf
Salt & Pepper to taste
2 tbsp. olive oil

Brown beef in hot oil. Add onion, peppers, garlic, tomato sauce, beef broth, Worcestershire sauce, and spices. Bring to boil. Reduce heat and simmer slowly for at least 1 1/2 hours. Add water as necessary. Add green beans and carrots. Add water to cover vegetables. Simmer 30 to 45 minutes until vegetables are done. Add mushrooms for last 10 minutes. Serve with mashed or boiled new potatoes.
