FRIED OKRA 
1 lb. okra
3 tbsp. all-purpose flour
2 egg whites
1 1/2 c. soft bread crumbs
Vegetable oil
Salt

Wash okra and rain well. Remove tip and stem, cut in 1/2 inch pieces. Coat with flour. Beat egg whites at room temperature until stiff peaks form; fold in okra. Stir in bread crumbs, coating okra well. Deep fry in hot oil at 375 degrees until golden brown. Drain on paper towels. Sprinkle with salt. Yield: 4 servings.
