MARINATED POTATO SALAD 
4 med. potatoes, boiled with peelings on
1 c. Italian salad dressing (oil and vinegar type--not creamy)
Lettuce
Tomato slices
2 hard-boiled eggs, peeled and sliced
Radishes, sliced
Cucumbers, peeled and sliced
Green onions, chopped
Grated Parmesan cheese

Peel and slice potatoes into 1/4 inch slices. Pour small amount of Italian salad dressing into bottom of shallow dish, place potatoes in dish and pour remaining dressing over potatoes covering completely. (If you need to layer potatoes, pour some dressing over first layer saving some for top layer. Potatoes should be completely covered with dressing.) Cover dish and marinate for at least 1 hour. (Potatoes will break apart very easily--handle with care.)

Arrange lettuce on individual salad plates. Place 3 or 4 slices of potatoes on top of lettuce, then neatly arrange tomato slices, hard-boiled eggs, radishes, cucumbers, and green onions on top. You may wish to add any other of your favorite salad ingredients. Sprinkle about 1 tablespoon of grated Parmesan cheese on top. Keep chilled until ready to serve.
