2 c. flour 2 c. water 4 eggs FILLING: 1 lb. Ricotta cheese 4-6 oz. grated Mozzarella cheese (save enough to sprinkle on top) 3 eggs 1/4 c. grated Parmesan cheese Tomato sauce Mix ingredients for shells. Use about 1/8 of a cup for each shell. Fry in electric fry pan. Make as many shells as you have batter for, at least enough to fill a 9x13 glass baking dish. Mix ingredients for filling (except tomato sauce). Place tomato sauce in bottom of pan. Fill and place shells in pan. Sprinkle with grated Mozzarella cheese. Bake at 400 degrees for 25-30 minutes covered. Bake with cover off for about 15 minutes. |
