GRILLED SALMON W/ GARLIC 
1 or 2 salmon fillets (depending on the amount of people)
small spray bottle w/ olive oil (Pam)
egg wash w/ pastry brush
2 to 3 cloves fresh garlic, minced "VERY" fine (garlic should be enough for all pieces)
1 tsp. oregano
1 tsp. basil
1 tsp. freshly minced parsley

Prepare outdoor grill with enough charcoal. Cover rack with foil.

In separate containers: Prepare egg wash, set aside. Mix garlic, parsley, oregano and basil, set aside. Mince garlic very very fine, set aside.

Cut salmon in squares (like ribs), place on foil lined rack on grill. When ready, spray grill with olive oil generously over entire surface.

Brush egg wash generously on the top and sides of the fish. Sprinkle minced garlic over fish, sprinkle 1/2 of oregano, basil and finely minced parsley over all pieces. Place meat side on rack for 5 to 6 minutes then flip for another 5 to 6 minutes or until tender.

Serve when done and sprinkle the remaining ingredients over the fish.

Note: Gas grills (outdoor or indoor) heat to 325°F and let cook slowly.
